Every year, a field in the town of Kihikihi, New Zealand comes to life in beautiful purple hues as the lavender begins its blossoming period. Growing to about 36-48 inches high, the field is divided into rows which need to be about 4-6 feet apart to allow the lavender to flourish to its fullest.
After the lavender has reached its maximum blossoming stage, it is harvested and put through various steps to make oil. Potpourris, baked goods, desserts, herbal tea, cooking, beauty products and uses in medicine are other things the lavender is used for.
Many people grow lavender in their garden, where they use the blossoming flower spikes in dried arrangements. The flowers are extremely fragrant and when a field is in full blossom, the scent is beautiful which also attracts bees, butterflies and birds.
