As the long stems on the lavender plant become top heavy from the blossoming flowers in a field in Kihikihi near Hamilton, New Zealand, they start to lean to one side where they grow in rows about 4-6 feet apart. When the flowers are finished blossoming, the lavender plant is then harvested from the field and used to make oil for a variety of goods.
The fragrance of the lavender is easy to distinguish from quite a distance and lures in the bees and butterflies searching to collect pollen. The purple flowers twist themselves around the stalk of the lavender plant reaching a height of between 36-48 inches when fully mature.
There are a genus of 39 species of these blossoming lavender plants with this type being the one most commonly used for commercial use. Many simply like the beauty of the flowers and the aroma and grow them in their gardens. Summer is one of the prettiest times of year to visit Kihikihi near Hamilton, New Zealand to see these fields flourish in their natural colors.
